What Makes a McKibbon Hotel Beverage & Service Manager?


As a key member of the hotel leadership team, the Beverage & Service Manager is accountable for the food and beverage outlets. While the focus is to guide the operation of the food and beverage outlets, you also serve as the manager on duty during the evening, allowing for exposure to all aspects of the hotel operations. The beverage & service manager is committed to guest satisfaction and providing a great experience for all guests. Your primary focus will be on our signature rooftop restaurant Urban Oak.


A Day in the Life:

  • Move throughout the facility and monitor the action of food prep and serving areas to ensure that associates are meeting food and beverage quality, brand, and service standards.
  • During operational hours you will continually audit guest service, ensuring attentiveness to the guests’ needs. Anticipating their needs before they know they need it. Drink refills, ensuring presetting for next courses, helping your service staff through elements of service running credit cards, doing wine service, and running food and drinks in a timely manner.
  • Responsible for continually checking in with both the bar and kitchen and audit ticket times to ensure they are within the appropriate time standards for your operation. When time standards are not met on any given shift, it will be imperative that they are discussed with your team at the culmination of service to determine how to mitigate time standards to be missed moving forward. Was it a prep issue? Is it a training issue? Is it a supply or equipment issue that did not allow us to execute as intended?
  • You will control the elements that determine profit and loss of the Food and Beverage operations.
  • You will coordinate with the Corporate Food and Beverage team in the planning of meals and menus.
  • You will work with the Food & Beverage Director, Executive Chef & Hotel General Manager on administrative duties, including tracking expenses, maintaining profitability, and invoice input.
  • Collaborate with the Chefs and conduct daily pre-shift staff meetings. Holds regular team meetings to applaud your team on their successes in addition to identifying areas of opportunity & room for improvement to maintain operational excellence.
  • You will be responsible for keeping the extensive spirit list/ menu up to date.
  • Schedule monthly and quarterly wine, beer, and spirit training sessions with vendors to allow continued education for your front of house staff.
  • Maintain and update the point-of-sale system with new menu items or any changes in pricing.
  • You will be responsible for maintaining the beverage inventory and beverage cost.
  • You will make it a priority to interact with guests during operational hours to create repeat business.
  • Collaborate with the Corporate Food and Beverage team on product pricing, menus selections, and training.

Managing and Conducting Human Resource Activities

  • Identifies the developmental needs of others and coaching, mentoring, or otherwise helping others to improve their knowledge or skills.
  • Improves service by communicating and assisting team to understand guest needs, providing guidance, feedback, and individual coaching when needed.
  • Participates in the employee performance appraisal process following McKibbon Hospitality standards.


Requirements

  • 4 years’ minimum experience in a beverage lounge or restaurant outlet
  • Experience in a supervisor or managerial position managing a staff of 15.
  • The ability to implement the established menu and service standards
  • The ability and drive to personify our culture in every interaction with guests and associates
  • The ability to perform initial and ongoing training of associates
  • The ability to deliver on the quality of service that guests deserve and expect
  • Spirit and wine knowledge (highly desired)
  • Remaining calm under pressure while working with speed and accuracy
  • The ability to work a varied schedule that includes weekends, holidays, and special event

Physical Requirements

  • Must be able to push/pull/lift up to 50lbs.
  • Must be able to endure long periods of standing, sitting and walking.
